Updates to Spark Images: Spark 3.1.2, upgraded data science packages to newest versions.

Updates to Root Analytics images:

  • Upgraded to Spark 3.1.2
  • Updated all data science packages to newest versions
    • Updated JupyterLab to 2.3.1 (3.x is not compatible with itkwidgets)
  • Added Spacey and NLTK
  • Resolved version incompatibilities with JupyterLab
  • Improved documentation describing images, their contents, and their uses.
  • Added tags to make it clear which images are available via Oak-Tree registry on DockerHub
